Probably the best sandwich ever invented or brownie, I’m not sure which. Technically classified as a “Big Bad Brownie” the folks at Metropolitan Market catering have out done themselves. Metropolitan Markets aren’t national, but I’m sure this recipe concept is.
Simply what it is, bake a high quality, from scratch (or mix if you must) batch of brownies. Cool it, do not slice them, invert the pan and shake the entire batch out. Cut the brownies in half, length wise, like you would a cake you’re about to spread frosting in between for layering effect.
Return the bottom half of the brownies to the pan and spread the thickest caramel you can find or the caramel that will pour on, but harden to a thick and chewy texture. Place the remaining slab of brownies on top of the caramel layer, pressing gently.
Place in fridge to expedite and get the caramel to set. Then slice into squares and serve.
Of course, some of this is speculation, but that was pretty much all the “Big Bad Brownie” was and it was a most delicious treat to be savored. If possible, create that batch of brownies with walnut pieces for the ultimate brownie treat.
